Why it’s on the route

Cafeología, led by Jesús Salazar, works with producers in four Indigenous communities around San Cristóbal, runs its own wet mills and a dry mill, and roasts about 30 tonnes a year on a 15 kg Giesen. Its filter coffees are offered by cupping score, 85, 86 or 87 points. The Real de Guadalupe café has a garden and terrace.
