Montecoyote was founded by Ricardo Urbina Luna and César Estrada Gattás and opened its own roastery soon after the bar, using it as a coffee laboratory. The team focuses on specialty coffee with traceability and a story, stressing closeness to producers. The Obispado bar has a welcoming feel and a Castiglioni dandelion light fixture.
