Why it’s on the route
Totem Tostadores began in 2020 under director Jorge Biedermann and in 2024 opened a Las Mercedes building that combines its roastery, a café and a training lab. It works with seven origins, from Ethiopian Kochere to several Brazilian lots, and serves them as filter, espresso, cold brew and nitro cold brew. The lab hosts courses and talks for up to 40 people.
