Um Coffee Co. is run by the Korean-Brazilian Um family, who bought their farm in 2009 and handle everything from growing to roasting, which happens on the floor above the Bom Retiro shop. The café sells only coffee from the family's Fazenda Um, brewed four ways including Kalita Wave pour-over, with an aroma bar where guests smell beans before buying. Co-founder Boram Um won the 2023 World Barista Championship.
