Red Bird Roasting opened in July 2025 inside the Vice and Virtue Brewing building, run by Peter Glockner and Perry Maxfield with James Balfour as head roaster. A Coffee-Tech 2.4-kg roaster sits in the cafe, and a larger 7-kg unit is planned. The bar has a Nuova Simonelli espresso machine and a separate single-dose grinder for pour-overs, in a space of jute sacks and Edison bulbs.
