Document Coffee Bar was opened in Koreatown in 2014 by Sojung Kwon and Byoungok Koh. It does not roast; instead it rotates single-origin pour-overs from roasters such as Phil & Sebastian and Ceremony, alongside six house signature drinks and more than a dozen teas. The minimal, high-ceilinged room feels like an art studio, with photos of regulars and only about ten stools.
