Ernesto opened in Brasília's Asa Sul in 2011 and later set up its own micro-roastery, working with lots from Mantiqueira, Caparaó and Chapada Diamantina in balanced, complex and exotic profiles. Breads are baked in-house, and the shop has a bookshop upstairs and a garden at the back; filter coffee has been offered on Chemex, V60, AeroPress and French press.
