Mask Cat was opened in 2002 by Davis, a fine-arts graduate and CQI Q Grader, making it one of Taipei's early third-wave cafés. He has small-batch roasted for about 20 years, mostly light, aiming for the shortest roast that brings out each bean's fruit acidity and florals. The café on Chang'an West Road in Datong serves these single origins, such as a Sumatra Gayo Mountain.
