Why it’s on the route
Cutbow was founded by Paul Gallegos, who brings nearly 30 years of roasting experience, including time at Peet's, and roasts all the coffee himself. Beyond espresso drinks there are tasting flights and free public cuppings on Fridays at noon. The North Valley space carries a fly-fishing theme and feels closer to an art gallery than a typical café.
