Elemental is run by partners Stephen Michalik, Chris Holliday and Laura and Laurent Massenat, and roasts on a tomato-red Probat, tracking every roast electronically and cupping around 90 coffees for each one it selects. The Midtown café at Hudson and 8th has a bar and European-style tables meant for conversation, plus a full kitchen serving breakfast, lunch and brunch.
