Why it’s on the route

La Coop was founded by Juan Luis Salazar Cano, who started the Unión Cantinil coffee growers' association in Huehuetenango, Guatemala, in 2006; his brothers run a La Coop roastery there. The Kennedy Street flagship, designed by co-owner Stefanie Fabrico, roasts Guatemalan coffee on a Diedrich under a skylight in view of guests. The 2,100-square-foot room keeps its original tin ceiling, with Guatemalan textile-inspired details, a lounge, a kids' corner and a plant-filled patio.
