Why it’s on the route
Merit Coffee was founded in San Antonio in 2009 and began roasting in 2014 in a small South Side warehouse; it now roasts in a roughly 9,000-square-foot facility, with head roaster Carlos Riaño. Beans come from Central and South America and Africa, and its coffees took two golds and five bronzes at the 2026 Global Coffee Awards. The Medical Center café is one of about 15 Merit shops across San Antonio, Austin, Dallas and Houston.
