Why it’s on the route
Onyx was founded in 2012 by Jon and Andrea Allen, and its downtown Rogers headquarters brings together the roastery, training lab, bakery and a coffee bar where guests can watch the roasting. The team has produced US Barista Champions Andrea Allen (2020) and Morgan Eckroth (2022) and 2022 US Brewers Cup winner Elika Liftee, and the bar serves pour-overs and tasting-style menus. The space seats more than 100 among concrete, brick, wood slats and plants, with a patio outside.
