Pablo's is one of Denver's original specialty roasters, in business for nearly three decades, with signature blends such as Danger Monkey and responsibly sourced single origins. Roasting and a cupping lab are housed at its East Colfax headquarters, and the Sixth Avenue shop is one of three Denver cafés. Expect a straightforward neighbourhood counter with drip, espresso and pastries.
