Why it’s on the route

Queen City Collective is run by Colorado Springs-born brothers Scott, Luke and Eric Byington, with Luke, a former roaster, behind the roasting. They buy directly from producers they know personally in Africa and Central and South America, prioritise women farmers, and label each bag as single origin, double origin or "made by her". The Baker café opened in 2018 beside Novel Strand Brewing, serving rotating origins as drip and espresso.
