Why it’s on the route
Quills was founded in Louisville in 2007 by brothers Nathan and Gabriel Quillo, and roasts by hand in small lots, sampling over 100 coffees a year to pick about twenty through direct-trade relationships. The Baxter Avenue café in the Highlands is its flagship, pouring espresso, seasonal drinks and pour-overs, with roasted beans for sale.
