Why it’s on the route

Rojo's is run by David Waldman, a former country-music pedal-steel player nicknamed "Rojo" by Willie Nelson, who opened his roastery in Lambertville in 2006. Coffee is roasted there on a 1956 gas-fired Probat, largely from small growers he buys from directly. The Palmer Square café, opened in 2013, is a small red-walled room serving coffee brewed several ways.
