Why it’s on the route

Savaya Coffee Market is owned by Turkish-born Burc Maruflu, who started it on East Broadway with the coffee roasted daily on site in a bright green roaster beside the bar. The focus is single-origin, fair-trade and organic coffee, with occasional small classes for guests who want to learn more. The original café is an intimate room built around a long mesquite bar, and Savaya now runs several cafés across Tucson.
