Why it’s on the route

Sey roasts its coffee on site in a high-ceilinged former warehouse in East Williamsburg, where skylights and a garage door that rolls open in good weather brighten the light-wood room. Its roasts skew very light and clean, served as espresso and filter, and the team runs cupping sessions. Laptop use is limited on weekdays, which keeps the focus on the coffee.
