Variety is a Brooklyn roaster that has grown into a small chain of cafés, roasting its own single origins and blends. The Ridgewood shop sits in a triangular corner building styled like a retro diner, with neon trim and quilted stainless steel behind the bar. Espresso and batch brew are the core, with Colson pastries and outdoor tables on both sides.
