Dan Yee and Shoji Sasa buy beans in small amounts and roast each coffee in house to suit its own character, so a new coffee is never more than a month away. The oak-panelled bar with brushed brass edges has mostly standing room and serves espresso and filter without any food. Sydney chefs name it among the coffee shops they return to.
