Toby's Estate roasts its espresso blends, monthly single origins and limited editions daily on the floor behind the Chippendale café, which is visible through glass doors. An island brew bar puts baristas face to face with guests and a filter bar pours experimental blends and single origins. The room was redesigned in 2022 with mirrors and an open layout, and food is limited to toasties, baguettes and pastries.
