Why it’s on the route

Dabov is a family roastery founded by Jordan and Vesela Dabov, who came back from the Czech Republic in 2008 and began roasting on a used 12-kilo Probat. Jordan judges Cup of Excellence and in 2016 bought Guatemala's top lot, and the beans supply over a hundred Bulgarian venues. The flagship near NDK works more like a coffee lab than a café, with a short espresso menu, several hand-brew options and a few seats.
