Why it’s on the route

Martines is a family-run Sofia roastery founded in 2008 whose Hristo Belchev café is its flagship, with a Peruvian master roaster, Alex, who holds an SCA certificate. The bar was the first in Sofia to use the Paragon brewer and also offers V60, Chemex and siphon, with a monthly special blend and a house blend called Sofia. It is a seated café in the city centre with beans and brewing gear on sale.
