Shavi Coffee Roasters was founded in 2021 by American Ryan McCarrel and was one of Georgia's first specialty roasters; it roasts in small batches and is known for adventurous lots such as a yeast-processed Burundi. The Vera flagship on Zandukeli Street is bright and airy, with hand brews, batch brew and espresso drinks alongside cakes and its well-loved cherry pie. Shavi now runs several cafés across Tbilisi and supplies beans to other shops.
