Honey Coffee is one of Fukuoka's founding specialty roasters, started by Katsuhide Izaki, who was buying single-origin lots in the early 2000s and judged Brazil's Cup of Excellence; his son Hidenori Izaki won the 2014 World Barista Championship. The Naka shop doubles as the company's roastery and bean store, brewing single origins by hand drip, French press and The BIRD, Honey's own piston-driven vacuum brewer.
