Akam Coffee Works is run by Atsushi Matsumoto, who learned roasting in Mie Prefecture before opening this glass-fronted shop in Naka-ku. Two Diedrich roasters sit in view behind the door, next to pour-over gear and a Sanremo espresso machine, and the menu notes dose, yield and roast date. Matsumoto also teaches roasting classes, and beans are sold in the shop and online.
