Coffee Bimi

Special experience
Why it’s on the route
Coffee Bimi was opened in 1977 by Morimitsu Muneo, who travelled to Yemen and Ethiopia in search of coffee's roots; since his death in 2016 his wife Mitsuko has run the shop in Akasaka. Beans are washed in warm water and rested before roasting in 4 kg batches on a roaster inherited from the Tokyo shop where he trained. Around 14 coffees, mostly Ethiopian and Yemeni mocha, are brewed by flannel drip at about 90°C at a small counter.
