Why it’s on the route

Caffe d'Bolla is run by John Piquet and his wife Yiching, and is one of the few cafés in North America devoted to siphon coffee, a method Piquet studied in Japan. He roasts on site in small batches that change weekly, with a seasonal siphon menu of single origins and espresso blends that rotate every week or so. Siphon cups are meant to be lingered over, so allow plenty of time.
