Why it’s on the route
Publik was founded in 2014 by Missy Greis, and its West Temple flagship is a two-storey café with the roastery visible behind glass. Coffee is roasted on a Diedrich IR-12 fitted with an afterburner, with operations offset by 65 rooftop solar panels; Food & Wine named it Utah's best coffee roaster in 2022. Pour-over is offered alongside espresso, and there are further cafés around Salt Lake City.
