Why it’s on the route

Coava was founded by Matt Higgins, a former barista at Albina Press, and its flagship on SE Grand Avenue is where the company first roasted, right beside the bar, before moving production next door and later to a larger headquarters. The industrial room of concrete, steel and wood keeps the original roaster, still used now and then. The short menu centers on single-origin pour-over and espresso, with cold brew on tap and occasional limited micro-lots.
