Why it’s on the route

Persimmon began with pop-ups in 2021 and opened its small Fishtown café on Girard Avenue in 2022, run by Kai Talim and Chaereen Pak with Sawyer Beckley directing the coffee. It roasts and serves one carefully chosen single origin each month, in a bright, roughly 350-square-foot room inspired by cafés in Seoul and Tokyo, with a white-oak bench and handleless ceramic cups.
