Royal Flamingo was started in 2018 by Bryan Brzozowski and Beth Stallings, who roasted 150-gram batches at home before moving to a commercial roaster in 2022. They buy lots from farmers focused on fermentation and drying, roasting for espresso and batch brew split into 'Daily Greats' and adventurous 'Super Fun' menus. The café, opened in 2024, shares a room with the I Like It Like That cocktail bar and offers a Barista's Breakfast tasting board.
