Why it’s on the route

Bosgaurus is owned by Hung, a long-time figure in Saigon coffee, and its villa in the Saigon Pearl complex by the river houses the roastery, with two large roasters running most of the week. It works closely with Vietnamese producers, roasting light for specialty and darker for ca phe sua da, which it makes with Vietnamese Arabica rather than the usual Robusta. The riverside villa is calm and set slightly apart; downtown branches include an opera-themed bar on Nguyen Sieu with a filter menu.
