Pilot began in 2009 in Leslieville as Te Aro Roasted, a cafe and micro-roastery founded by Andy Wilkin and Jessie Holmes, and now roasts at its own roastery on Wagstaff Drive. It buys through Direct Trade partnerships, including a long-running relationship with the Mercedes farm, and the filter list rotates through single origins. The Queen Street East shop pairs a tasting-bar style of service with retail bags of the house roasts.
