Substance Café

Why it’s on the route

Substance is a small room on Rue Dussoubs where founder Joachim Morceau roasts on a Loring S7 and sells the coffees mostly through the café. The menu rotates about fifteen competition-level lots from farms such as Finca Deborah in Panama and Finca La Esperanza in Colombia, served as espresso or filter. Guests sit at a U-shaped bar around the work station; there are no pastries or takeaway.
