Why it’s on the route

Passage Coffee was opened in Tamachi in 2017 by Sasaki, a former Paul Bassett barista who in 2014 became the first Japanese winner of the World AeroPress Championship. It now runs four Tokyo locations including its own roastery, where coffee is roasted on a cast-iron Giesen. Sasaki buys directly, such as Ethiopian lots from an exporter he has known for years and Colombian coffee from producer Astrid Medina.
