Why it’s on the route
Gimisa opened in Seongsu-dong in 2021, founded by a barista who judges sensory scores at national and world barista competitions; the name draws on a word meaning aroma and taste. Its signature is a seasonal tasting course of three drinks built around beans the shop selects and blends itself, sometimes paired with tea, alongside hard-to-find lots such as Panama's Santa Maria farm. A retail wall sells its own-brand coffee and tea.
