Why it’s on the route
Coffee Underwater was founded by Eric, a former bartender who develops the drinks, and Chris, who sourced green coffee for a trading firm and now roasts. Chris roasts a little darker than the local norm to build sweetness and caramel, supplying nine cafés in Taiwan; Eric competed at the 2025 World Barista Championship. The blue-walled Zhongshan shop serves single origins as drip and espresso, plus a long list of mocktails.
