Why it’s on the route
Boxcar Coffee Roasters was started in Boulder in 2010 by Vajra and Cara Rich, and buys most of its coffee from Mauricio Salaverria's Divisadero Farms in El Salvador. The Pearl Street café also serves as the bakery for both Boxcar shops, turning out croissants, kouign-amann and canelés each day, while the bar pulls the Stella espresso and brews the No. 7 Blend as filter.
