Why it’s on the route
Pinewood was co-founded by Dylan Washington and John David Beard, who moved the roaster into a flagship bar on Austin Avenue in 2017 and roast on a Diedrich IR-12 in the adjoining suite. The bar serves espresso and Chemex, with a roast style aimed at balance and sweetness rather than very light profiles. Inside are custom birch booths, pine fixtures and white walls, and a large live oak shades the patio and a small stage used for live music.
