Snowy Owl started in 2015 as a small-batch roaster in Brewster on Cape Cod, co-owned by Peruvian-born Manuel. Its Sandwich café occupies a former antique shop with two garage doors, black concrete counters and a mural on the coffee supply chain, built around a Loring S35 roaster visible from the floor, and it serves espresso, filter coffee and Peruvian-style empanadas made with Cape Cod meat.
