Why it’s on the route

Speckled Ax began in 2007 in Waterville as Matt's Wood Roasted Organic Coffee and took its current name in 2012, when Matt Bolinder opened this Congress Street shop. It is one of the few wood-fired roasters in the US, using a refurbished 1970s Petroncini fed with Maine-grown oak, maple and ash. The compact downtown café serves espresso and filter coffee.
