Goodman Roaster was opened in Shimogyo in 2020 by Tokyo-born Atsuomi Ito, who had earlier started cafés in Taiwan and Hong Kong. Q-grader roasters work a 5kg Diedrich in-house, roasting single origins light for sweetness and gentle acidity. A particular draw is Taiwanese coffee from Alishan, such as the Yangui farm, served as hand drip alongside lots from other origins.
