Why it’s on the route
Raw Sugar Roast grew out of Swim, a wholesale roastery near Haneda, and opened its café near Kyodo Station in 2022. Head roaster Yuya Kosakada, formerly of Paul Bassett and Glitch, roasts light only on a 15 kg Giesen, rotating a dozen or so seasonal single origins from places like Ethiopia and Kenya. Pour-overs come off the V60, and the room pairs exposed concrete with vintage European furniture.
