Why it’s on the route

Anticonquista was co-founded by Elmer Fajardo Pacheco and Lauren Reese and roasts green coffee mostly from the Pacheco family farm and its neighbours on the Guatemala–Honduras border, describing itself as Chicago's only family-farm-owned roaster. Its permanent Pilsen café opened in March 2025, with a small Arc roaster on site, espresso, batch brew, café de olla and cold brew. A large quetzal mural and Maya-inspired brick cutouts shape the room.
