Why it’s on the route

Colectivo is a Milwaukee coffee roaster, and this Clark Street shop, opened in 2017 in a former bagel store, was its first in Chicago. The company buys directly from farmers and small collectives in Central America, Africa and Asia and roasts in Milwaukee, with pastries from its own Troubadour Bakery. A former parking lot became a large patio with steel umbrellas, a fire pit and heaters.
