Why it’s on the route

Daysol was founded by Bert Davis, who began roasting in Denver before moving to Birmingham in 2019. In January 2026 it opened its flagship roastery-café in a roughly 8,000-square-foot former brewery on 3rd Avenue South, where a Diedrich IR12 roasts in full view of the bar. Roll-up garage doors, an outdoor stage, an art room and an herb garden and beehives for house syrups round out the space.
