Why it’s on the route

Hedge Coffee was founded in 2015 by Olga and Alex Sobal as a fleet of mobile espresso bars built by Capsule MFG, serving Linea Caffe at events around San Francisco. It began roasting in-house during the pandemic, with Alex as head roaster, and in 2025 opened a permanent café and roastery on Shotwell Street in the Mission, fitted out in redwood around a Loring roaster. The bar runs Modbar espresso and Hario Switch pour-overs.
