Why it’s on the route

Honeybee is a family-run Knoxville roaster that began with an Airstream trailer before opening its first brick-and-mortar café on Sevier Avenue in South Knoxville in 2017. The company roasts its own coffee, buys from producers it knows and sells wholesale; at the bar, filter coffee comes as batch brew or by hand on Chemex and AeroPress alongside Slayer espresso. The roughly 2,000-square-foot shop sits a short bike ride from local mountain-biking trails.
